An in-depth look at Recruitment numbers

I'm annoyed I haven't done this before.

I think I kinda have maybe, but this format makes more sense.

Why does your place of work keep recruiting when you can't get enough hours?

#StaffingLevels are initially determined your #BaseRota which is a minimum requirement for Operation.

The general minimum is a Manager, a Bartender/ Server and a Chef if you have a kitchen. Some places the Manager does the Bartending/Serving/ Kitchen if those are whats needed. Or worst case scenario, the Manager does it all.

I'm just going to put it out there now that if you're a Bartender/Server and you open/close the venue or are ever left on your own but still get paid the minimum rate...

If you're the #Manager doing all the roles, then that sucks but that's kinda on you boo.

Now, to actually answer the question, you have to look at the opposite end of the spectrum. Being at full capacity. You have to ask;

How many people do you need to operate safely?

How many people can you physically have serving on that bar before you get #DiminishingReturns ?

Have I covered every revenue stream?

If my average #ServingTime is 2minutes per drink, then that's one Bartender per 30 Customers per Hour.

If the room hold 120 people, but you can only fit 3 people on the Bar. You'd be missing 30 people per hour.

And then outside of your maximum occupancy of all areas. A safe margin for error is around 10%.

If you can fit a maximum of 40 staff per shift, you need 44 staff. Not just to cover illnesses, let people have their holiday. Always.

Key point in that paragraph is "Per Shift" Even if your Maximum Staff Capacity is 40, and you have 4 people off.

If you operate for... let's say 18hours a day. That's 9am to 3am, And let's say an hour to open and an hour to close. 20hours a day. (Which is my plan). I think I've settled on shifts being a maximum of 12 hours, with two 30 minute breaks. So, 4 hours, 30 minute break, 4 hours, 30 minute break, three hours, staff drink or go home. If you do that, then you still have to operate for 8 hours before hand.


Fuck Split Shifts.


So if you're at full Capacity from 9am, you would need another 40 people. Working 8 hour shifts (for example) because you can't over lap the maximum capacity.


Obviously this is based on extremely successful venues that would only really hit this volume a couple of times a year. Or 1 day a week.


That was the most extreme examples.

The more common examples in the real world atm are that Venues are driven by the weekend and most employers will only employee the minimum amount of staff needed to serve the literal building capacity number of people, at a rate of 75 patrons per Bartender, per hour. Meaning, one drink per customer served every 48 seconds. Which although not unrealistic, is uncommon that a venue will have staff that well trained in an environment that well set up.


I'm definitely gonna add this to my list of spread sheets I need to draw up. 🤓


The reason this affects staff in a negative way is that you could need anywhere from 5 - 10 times the amount of staff on a Saturday that you need on a Tuesday and due to rates of pay. People can't justify giving up their weekend for that low value, meaning they have to be enticed by a minimum of let's say; 30hours. Which will have to come from quieter shifts in the week.


Which I will do the math for, but not in this post.

I'm going to design a theoretical, idealistic rota at some point because it's in my head so I'll use that an example.


Do you know what the general answer to this problem is though.


HIRE MORE STUDENTS or literally, there are people out there that just want to work an extra day, even if just for social reasons. These people are far too often passed by managers haven't actually done the math/ engagements with their staff to know what it iscthey actually need.
